1/3 cupCoconut Flour
1tsp Xanthan Gum
1/4 tspSalt
2tbspGranulated Sweetener
1Egg
4tbspButter
1cupWater
2tbspOilfor frying
Cinnamon Sugar Topping
1/2 cupGranulated Sugar Substitute
1tbspCinnamon
Instructions
In a pot, begin to heat water, butter and sugar.
Bring it to a boil. Turn off heat and stir in the gluten free flour and salt.
Place the dough in a bowl and mix together with egg.
Move the churro dough into a churro maker.
In a large skillet, heat oil.
Pipe the churro dough into the hot skillet. Cook for 1-2 minutes then turn for another 1-2 minutes.
Remove from oil and place on a paper towel to drain extra oil.
Roll the churros in the cinnamon sugar blend.
