Keto Air Fryer Scotch Eggs

Ingredients

  • 1 pound Ground Pork Breakfast Sausage
  • 7 large Eggs divided
  • 1/4 cup Almond Flour
  • 1 cup Pork Rind Crumbs
  • 1/2 tsp Chili Powder
  • 1/2 tsp Garlic Powder

Instructions

  • Fill a saucepan halfway with water, and bring to a boil over medium high heat.
  • Add six of the eggs to the boiling water, reduce the heat to medium low, and cook for exactly 6 minutes.
  • Remove the eggs, and immediately place into a bowl of ice water to stop the cooking process and cool.
  • Place the almond flour into one shallow bowl, and mix with the garlic powder.
  • Add the pork rind crumbs to a separate shallow bowl, and season with the chili powder as well as salt and pepper to taste.
  • Beat the remaining egg, and put into a bowl by itself.
  • Peel each of the boiled eggs.
  • Preheat the air fryer to 375 degrees.
  • Divide the sausage into six evenly pieces.
  • Flatten each piece of sausage between two pieces of parchment paper, and then wrap the sausage around the eggs completely.
  • Roll the sausage-covered eggs in the almond flour, dip in the egg and then coat in the pork rind crumbs.
  • Place on a well greased pan or baking sheet.
  • Air fry the scotch eggs for 15 minutes, turning halfway through the cooking process.
