What Are Scotch Eggs
Surprisingly, scotch eggs did not originate in Scotland. They were first invented in Yorkshire, England, in the 18th century. The name scotch eggs comes from the people who invented them – William J. Scott & Sons. They called them Scotties back then.
So, what are scotch eggs? They are boiled eggs that are wrapped in sausage meat and then covered in breadcrumbs and deep fried. The classic scotch eggs are not exactly diet-friendly, so I set out to make a low-carb version.
How Do You Make Scotch Eggs
Making scotch eggs is a lot easier than it looks. You just wrap some hardboiled eggs in cooked sausage, then coat them in breadcrumbs and fry them.
Classic scotch eggs are made with cooked sausage – usually the kind they call “bangers” with the casings removed. I made a few changes to the classic recipe. and you can’t even tell. They are still just as crispy and savory.
Air Fryer Scotch Eggs
Air fryers work by filling the basket with hot air, so you need to remember to flip the scotch eggs over halfway through the cooking time. It only takes about 15 minutes for them to cook; so flip them over after about 7 minutes.
I used pork rinds instead of bread crumbs. When you use pork rinds in keto cooking, check the labels. Don’t use any seasoned pork rinds that include extra carbs.
Keto Scotch Eggs
To save yourself time, you can hard boil the eggs ahead of time. It only takes about 6 minutes for the eggs to boil, but that is still precious time when you are really busy.
I learned this tip recently: older eggs are easier to peel when you hard boil them. Keep eggs in the refrigerator for about a week and then boil them. The shells will be easier to remove.
What Do You Eat With Scotch Eggs
Scotch eggs are traditionally served with homemade baked beans and a salad. To keep your meal low-carb, I suggest serving them with a cold spinach salad and cauliflower mash.
The mashed cauliflower will taste just like the classic dish bangers and mash.
Keto Air Fryer Scotch Eggs Recipe

Ingredients:
Ground pork breakfast sausage
Large eggs
Almond flour
Pork rind crumbs
Chili powder
Garlic powder
Salt and pepper
Instructions:
Fill a saucepan halfway with water, and bring to a boil over medium high heat.
Add six of the eggs to the boiling water, reduce the heat to medium low, and cook for exactly 6 minutes.
Remove the eggs, and immediately place into a bowl of ice water to stop the cooking process and cool.
Place the almond flour into one shallow bowl, and mix with the garlic powder.
Add the pork rind crumbs to a separate shallow bowl, and season with the chili powder as well as salt and pepper to taste.
Beat the remaining egg, and put into a bowl by itself. Peel each of the boiled eggs.
Preheat the air fryer to 375 degrees.
Divide the sausage into six evenly pieces.
Flatten each piece of sausage between two pieces of parchment paper, and then wrap the sausage around the eggs completely.
Roll the sausage-covered eggs in the almond flour, dip in the egg and then coat in the pork rind crumbs.
Place on a well greased pan or baking sheet.
Air fry the scotch eggs for 15 minutes, turning halfway through the cooking process.
