Keto Almond Joy Clusters

It's so easy to make keto almond joy clusters at home that you'll skip the store bought kind every time (and they're low-carb!).

Equipment

  • Microwave-safe bowl
  • Parchment Paper
  • Baking Sheet

Ingredients

  • 1 1/2 cups Unsweetened coconut flakes
  • 1/2 cup Coconut Oil melted
  • 2 tsp Coconut Oil
  • 1 cup Keto Chocolate Chips
  • 20 Whole Almonds

Instructions

  • Place the coconut flakes into a mixing bowl, and add the melted coconut oil a little at a time, stirring completely to combine until the mixture holds together.
  • Form the mixture into 10 evenly sized clusters, and place them onto a parchment lined baking sheet.
  • Press two almonds into the top of each cluster.
  • Place the tray into the freezer for at least 3 hours until the clusters harden.
  • Add the chocolate chips and 2 tsp coconut oil to a microwave safe bowl, and heat for 30 seconds at a time until well combined and smooth.
  • Dip the clusters into the chocolate, and place back onto the parchment lined baking sheet.
  • Freeze the clusters again until the chocolate has set.
