It’s so easy to make keto almond joy clusters at home that you’ll skip the store bought kind every time (and they’re low-carb!).
Keto Almond Joy
In all my years of making chocolate desserts on Stylish Cravings, this is the first time that I’ve tried to recreate Almond Joy candy bars. And that actually surprises me because coconut, chocolate, and almonds are pretty basic ingredients.
Well, the wait is over! These little keto almond joy clusters taste just like the famous candy bar!
It might surprise you to find out there are only 4 grams net carbs in each mini almond joy bite! This quick recipe makes 10 mini chocolate bites.
It’s just enough to silence those chocolate cravings and keep you in ketosis. Keep reading and I’ll share my favorite tips, tricks, and even a few more chocolate recipes.
Almond Joy Clusters
Read the back of an Almond Joy bar and you’ll see a huge list of ingredients. But I kept my recipe super simple.
I only used four easy ingredients. In fact, if you have ever baked any keto desserts recently, you might have everything you need already!
Probably the most surprising part of this recipe is the fact that I didn’t add any kind of sweeteners to it. That’s because the keto chocolate chips taste sweet enough to me that I didn’t think the coconut filling needed to be any sweeter.
If you like things to taste extra sweet, then I suggest adding a few drops of erythritol to the coconut flakes.
Homemade Almond Joys
I divided the coconut mixture into ten equally-small sized bites. But if you wanted to make larger candy bars, then feel free to make them bigger.
Just remember that if you make them bigger, there will be more carbs in each candy bar.
What is the best type of chocolate chips to use as the outer coating for the almond joys? That depends on your tastes and what you like.
I used milk chocolate chips but if you want a really rich chocolate bite, then use dark chocolate chips. I don’t recommend using white chocolate because I don’t think it pairs very well with the coconut.
Keto Chocolate Almond Bites
These keto chocolate almond joy clusters are a sweet and salty delight! And you don’t need any fancy kitchen equipment, either.
First, you’ll need a microwave-safe bowl to melt the chocolate chips. Next, you’ll line a baking sheet with either parchment paper or a silicone baking mat.
If you manage to have any leftover that you need to store (by some miracle) then store them in an airtight container. They will stay fresh in the dark in a cool, dry place (like the pantry).
You don’t need to refrigerate them unless your house is really hot. You can freeze them, too.
They will stay fresh in the freezer for about six months.
