Ingredients

Cookies

  • 1 2/3 cups Almond Flour
  • 1/3 cup Swerve Brown Sugar Substitute
  • 3 tsp Baking Powder
  • 1 tsp Cinnamon
  • 6 tbsp Cold Butter grated
  • 1 1/2 cups Finely chopped and peeled Zucchini
  • 1/2 cup Almond Milk

Sugar-Free Glaze

  • 1 cup Swerve Powdered Sugar Substitute
  • 2 tbsp Almond Milk

Instructions

  • Preheat the oven to 350 degrees.
  • Add the zucchini, Swerve brown sugar substitute and cinnamon to a bowl, and toss to combine well.
  • In a mixing bowl, stir together the almond flour, baking powder and cold grated butter. Beat until combined into a crumbly mixture.
  • Add in the milk and zucchini mixture, and stir to combine well.
  • Drop by the spoonful onto a parchment lined baking sheet, and bake for 12-15 minutes until browned on the bottom and cooked through.
  • Let the cookies cool to room temperature.
  • Whisk together the glaze ingredients, dip the cookies in the glaze and allow it to set before serving.
