If you miss those deep-fried delights, then make a batch of these cookies. They’re crumbly, sweet, and filled with the intoxicating cinnamon aroma that apple pie is known for.
The really surprising thing is that there is only 3 grams net carbs in each cookie! You can add them to your lunch as a dessert and still stay within your macros.
They’re naturally gluten-free because I used a base of almond flour. Then, to keep it low-carb, I used zucchini instead of apples.
Before you worry, let me tell you that this works better than you might think!
Keto Apple Cookies
I feel like I should be saying, “psych!” Because these apple fritter cookies don’t actually have apples in them. Sure, they look like they have small pieces of green apples, but those are bits of zucchini.
Don’t let that stop you. Make a batch of them and you won’t even be able to tell that they’re not apples.
This is because the zucchini pieces are covered in Swerve brown sugar substitute and cinnamon, so they taste like apple pie filling. This is how I made my keto apple pie.
It’s more like a keto zucchini pie. But the flavor is the exact same!
Gluten-Free Cookies
I used almond flour to keep the cookies gluten-free and keto-friendly. Remember to use almond flour, not almond meal.
If you try to use almond meal, the cookies will taste grainy. Please don’t try it.
Remember to use cold butter that you grate. This is what gives the cookies the iconic crumbly texture.
If the butter starts to warm up to room temperature, move it back to the refrigerator, it should be really cold.
I also used almond milk as the wet ingredient. Please remember to use unsweetened, plain almond milk.
You can also use plain, unsweetened coconut milk as a substitute.
What To Eat With Cookies
Apples are the quintessential fall fruit. These cookies taste just like a hot apple pie!
So, serve them at parties with your other favorite fall desserts. You could put them on a cookie tray with keto butter cookies.

How To Store Cookies

If you want to keep them soft, place a piece of bread on top of the cookies. It can be keto-friendly bread or traditional wheat bread. The bread will become stale, but keep the cookies moist.

Directions
Preheat the oven to 350 degrees.
Add the zucchini, Swerve brown sugar substitute and cinnamon to a bowl, and toss to combine well.
In a mixing bowl, stir together the almond flour, baking powder and cold grated butter. Beat until combined into a crumbly mixture.
Add in the milk and zucchini mixture, and stir to combine well.
Drop by the spoonful onto a parchment lined baking sheet, and bake for 12-15 minutes until browned on the bottom and cooked through.
Let the cookies cool to room temperature.
Whisk together the glaze ingredients, dip the cookies in the glaze and allow it to set before serving.
