Ingredients

Keto Pie Crust

  • 1 1/2 cups Almond Flour
  • 3 ounces Cream Cheese softened
  • 1 tsp Xanthan Gum
  • 1/2 tsp Baking Powder
  • 1 large Egg
  • 2 tbsp Swerve Confectioner's Sugar Substitute
  • 1 pinch Salt

Keto Apple Pie Filling

  • 2 large Zucchini peeled and diced
  • 2 tbsp Butter
  • 1/4 cup Swerve Brown Sugar Substitute
  • 1 tsp Vanilla
  • 2 tsp Apple Pie Spice
  • 1/4 cup Water

Keto Apple Pie Crumb Topping

  • 1 cup Almond Flour
  • 3 tbsp Butter melted
  • 1 tsp Apple Pie Spice
  • 2 tbsp Swerve Confectioner's Sugar Substitute

Instructions

  • Preheat the oven to 350 degrees.
  • Add the ingredients for the crust to a mixing bowl, and blend until crumbly.
  • Press the crust mixture into the bottom and up the sides of a well greased pie plate.
  • Bake for 10 minutes.
  • While the crust is baking, melt the butter in a skillet over medium heat.
  • Add in the zucchini, brown Swerve, vanilla, apple pie spice and water.
  • Cook until the zucchini softens, and the mixture thickens.
  • Pour the filling into the pre-baked pie crust.
  • In a bowl, blend together the ingredients for the crumb topping.
  • Sprinkle the crumb topping over the pie.
  • Bake for 20 minutes.
  • Let cool before serving.
