Directions
Preheat the oven to 350 degrees. Add the ingredients for the crust to a mixing bowl, and blend until crumbly.
Press the crust mixture into the bottom and up the sides of a well greased pie plate. Bake for 10 minutes.
While the crust is baking, melt the butter in a skillet over medium heat. Add in the zucchini, brown Swerve, vanilla, apple pie spice and water. Cook until the zucchini softens, and the mixture thickens.
Pour the filling into the pre-baked pie crust.
