Ingredients

  • 1 pound Brussels Sprouts trimmed and cut in half
  • 1 tbsp Butter
  • 1/2 Onion
  • 2 tbsp Olive Oil
  • Salt and Pepper to taste
  • 2 tsp Minced Garlic
  • 2/3 cup Heavy Whipping Cream
  • 1/4 cup Bacon Pieces plus additional for garnish
  • 2 tsp Fresh Thyme
  • 1/4 cup Parmesan Cheese grated
  • 1/2 cup Gruyere Cheese shredded

Instructions

  • Preheat the oven to 400 degrees.
  • Place the brussels sprouts into an oven-proof skillet.
  • Drizzle the brussels sprouts with olive oil, and season with salt and pepper to taste.
  • Bake for 15 minutes.
  • While the brussels sprouts are baking, add the butter to a saucepan over medium heat.
  • Saute the onions in the butter until softened.
  • Stir in the garlic, and saute another 30 seconds.
  • Pour in the heavy whipping cream, and simmer until thickened.
  • Mix in the parmesan, thyme, ½ of the bacon pieces and the gruyere cheese. Stir until the cheese has melted and the sauce has thickened.
  • Remove the brussels sprouts from the oven, and pour the sauce over them. Stir to combine.
  • Sprinkle with the remaining bacon pieces.
  • Bake for another 15 minutes.
  • Let sit for 5 minutes before serving.
