Keto Au Gratin Brussels Sprouts Recipe

Ingredients:
Brussels sprouts trimmed and cut in half
Butter
Onion
Olive oil
Salt and pepper
Minced garlic
Heavy whipping cream
Bacon pieces plus additional for garnish
Fresh thyme
Parmesan cheese grated
Gruyere cheese shredded
Instructions:
Preheat the oven to 400 degrees.
Place the brussels sprouts into an oven-proof skillet.
Drizzle the brussels sprouts with olive oil, and season with salt and pepper to taste. Bake for 15 minutes.
While the brussels sprouts are baking, add the butter to a saucepan over medium heat.
Saute the onions in the butter until softened.
Stir in the garlic, and saute another 30 seconds.
Pour in the heavy whipping cream, and simmer until thickened.
Mix in the parmesan, thyme, ½ of the bacon pieces and the gruyere cheese. Stir until the cheese has melted and the sauce has thickened.
Remove the brussels sprouts from the oven, and pour the sauce over them. Stir to combine.
Sprinkle with the remaining bacon pieces.
Bake for another 15 minutes. Let sit for 5 minutes before serving.

- 1/4 cup Parmesan Cheese grated
