Ingredients

Chicken Salad Roll-Ups

  • 8 Keto Street Taco Sized Tortillas
  • 1 Avocado
  • 1/3 cup Chopped Strawberries
  • 2 cups Chicken shredded
  • 1/3 cup Mayonnaise
  • 1/4 cup Celery diced

Strawberry Vinaigrette

  • 1/2 cup Strawberries chopped
  • 2 tbsp Olive Oil
  • 2 tsp Dijon Mustard
  • 2 tsp Sugar-Free Honey
  • 2 tbsp Balsamic Vinegar

Instructions

  • Add the avocado to a mixing bowl, and mash it well.
  • Place the chicken, celery, mayonnaise, celery and salt and pepper to taste into the mixing bowl with the avocado, and stir to combine well.
  • Fold the strawberries into the avocado mixture.
  • Fill the tortillas with the chicken salad, and roll closed.
  • Heat a pan over medium heat, and spray with cooking spray.
  • Place the filled tortillas seam side down into the pan, and sear until browned and crispy. Turn the tortillas over, and lightly toast the other side before setting aside.
  • Add all of the vinaigrette ingredients to a food processor, and blend until smooth.
  • Serve the rollups with the vinaigrette for dipping or drizzling.
