Chicken Salad Roll-Ups
8Keto Street Taco Sized Tortillas
1Avocado
1/3cupChopped Strawberries
2cupsChicken shredded
1/3cupMayonnaise
1/4cupCelery diced
Strawberry Vinaigrette
1/2cupStrawberries chopped
2tbspOlive Oil
2tspDijon Mustard
2tspSugar-Free Honey
2tbspBalsamic Vinegar
Instructions
Add the avocado to a mixing bowl, and mash it well.
Place the chicken, celery, mayonnaise, celery and salt and pepper to taste into the mixing bowl with the avocado, and stir to combine well.
Fold the strawberries into the avocado mixture.
Fill the tortillas with the chicken salad, and roll closed.
Heat a pan over medium heat, and spray with cooking spray.
Place the filled tortillas seam side down into the pan, and sear until browned and crispy. Turn the tortillas over, and lightly toast the other side before setting aside.
Add all of the vinaigrette ingredients to a food processor, and blend until smooth.
Serve the rollups with the vinaigrette for dipping or drizzling.
