Avocado Chicken Strawberry Salad
There’s a lot going on with these roll-ups. It’s more than just chicken salad roll-ups.
The chicken salad has sweet strawberries, creamy avocados, and crunchy celery. It’s all held together with tangy mayonnaise.
Then it’s all roll up in street-taco sized zero carb tortillas. You could stop here, it sure tastes amazing just like this.
But then I added a homemade strawberry vinaigrette. It’s the ultimate dip for the chicken salad roll-ups.
Fresh strawberries, sugar-free honey, and zesty balsamic vinegar. Save this recipe so you always have the vinaigrette.
It tastes amazing on a chopped lettuce salad or as a dip for keto-friendly chicken nuggets.
Keto Chicken Salad
A chicken salad is a perfect go-to keto-friendly lunch. It’s full of protein and it’s really easy to make with canned chicken or shred some rotisserie chicken or chop up some leftover chicken that you have in your refrigerator.
This avocado chicken strawberry salad was inspired by my Keto Avocado Chicken Salad. That one is made with a lot of similar ingredients but instead of mayonnaise, I used olive oil and I added some scallions and bacon.
If you want to add some bacon to this chicken and strawberry salad, go ahead. The saltiness of the bacon will actually enhance the sweetness of the strawberries.
Chicken Strawberry Salad
Did you know that strawberries have the fewest carbs? One cup of strawberries has 11.1g total carbs and 7.9g net carbs.
That’s why I used strawberries in both the chicken salad and the vinaigrette. They add sweetness without increasing the carbs too much.
Do you need to eat more protein? Then replace the mayonnaise with some unsweetened plain Greek yogurt.
It’s a natural source of protein and will taste delicious with the chicken salad. Each roll-up has just 2 grams of net carbs, leaving you plenty of carbs for any other sides you want to eat for lunch.

How To Store Avocado
I suggest eating all of the roll-ups as soon as you make them. Don’t try to store them or use them in your meal prep.
The avocado will start to turn brown. You can delay the diced avocado from browning by misting it with lemon juice.
It’s best to keep the avocado on your counter and use it as soon as it’s ripe. It should be slightly firm.
If it’s too soft, it is too ripe and inside the avocado will have brown spots.

Ingredients
Roll-Ups:
- Keto Street Taco Sized Tortillas
- Avocado
- Chopped Strawberries
- Chicken
- Mayonnaise
- Celery
Strawberry Vinaigrette
- Strawberries
- Olive Oil
- Dijon Mustard
- Sugar-Free Honey
- Balsamic Vinegar
Directions
Add the avocado to a mixing bowl, and mash it well.
Place the chicken, celery, mayonnaise, celery and salt and pepper to taste into the mixing bowl with the avocado, and stir to combine well.
Fold the strawberries into the avocado mixture. Fill the tortillas with the chicken salad, and roll closed.
Heat a pan over medium heat, and spray with cooking spray. Place the filled tortillas seam side down into the pan, and sear until browned and crispy. Turn the tortillas over, and lightly toast the other side before setting aside.
Add all of the vinaigrette ingredients to a food processor, and blend until smooth.
Serve the roll ups with the vinaigrette for dipping or drizzling.

- 8 Keto Street Taco Sized Tortillas
- 1 Avocado
- 1/3 cup Chopped Strawberries
- 2 cups Chicken shredded
- 1/3 cup Mayonnaise
- 1/4 cup Celery diced
Strawberry Vinaigrette
- 1/2 cup Strawberries chopped
- 2 tbsp Olive Oil
- 2 tsp Dijon Mustard
- 2 tsp Sugar-Free Honey
- 2 tbsp Balsamic Vinegar
