Keto Bacon Egg and Cheese Smash Tacos

Ingredients

  • 4 Zero Carb Tortillas
  • 4 large Eggs
  • 8 ounces Ground Breakfast Sausage
  • 1 cup Shredded Cheddar Cheese
  • 1/4 cup Bacon Pieces
  • Creamy Salsa Verde for garnish

Instructions

  • Crack the eggs into a skillet over medium high heat, and fry until done to your liking. Season with salt and pepper to taste, and set aside.
  • Form the breakfast sausage into four evenly sized patties, and press across the front of a zero carb tortilla.
  • Place the tortillas, meat side down, into a skillet over medium heat. Saute until the meat is cooked through. Flip the tortillas over, and saute for 1-2 minutes until crispy and browned. Remove and set aside.
  • Add a ΒΌ cup of cheese to a small circle in the skillet. Let it get mostly melted, and then place one of the tortillas sausage side down on top of the cheese. Saute another few seconds, and then remove, and place the tortilla side down onto a plate.
  • Repeat step 4 until all tortillas have cheese on top of the sausage.
  • Top each smash taco with one of the eggs, and then sprinkle with the bacon pieces.
  • Drizzle with creamy salsa verde sauce before serving.
