What Are Smash Tacos
A smash taco is basically a combination of a smash burger and a street taco. A smash burger is basically a hamburger patty that is smashed flat while on the grill.
This makes it extra crispy and the flavor seems to rise to the surface of the meat. So, I took the smash burger idea, and made a breakfast taco out of it.
These smash tacos are made with sausage patties instead of hamburger patties and are topped with eggs, bacon, and salsa verde. This is one of the tastiest ways to enjoy your favorite breakfast foods.

There are 4 grams net carbs in each taco, making them a really easy and high-protein way to start your day. If you’re looking for something different for breakfast, and you love Mexican or Tex-Mex food, then you’ve got to try these.
The bacon egg and cheese combination is classic. But then when you top it all with salsa verde and smash it in a fried tortilla, you’ve got a memorable and delicious breakfast!
And if you’re running short on time, you can turn this into a Tex Mex breakfast bowl. Skip the tortillas and just add the sausage, bacon, eggs, cheese, and sauce to a bowl and mix it all up.
Breakfast Smash Tacos
Customize these smash tacos and make them taste just how you want them to! Use your favorite kind of ground sausage.
I used mild (because my kids prefer it) but spicy sausage would taste amazing with them. And instead of shredded cheddar cheese, use shredded pepper jack or even Monterey jack cheese.
You could even add some sliced avocado, diced tomatoes, or some shredded lettuce to the tacos! And for a bit more heat, add some sliced jalapenos.

How To Store Cooked Eggs
This is a recipe that really tastes best when you make it fresh. It only takes about 10 minutes to fry it up, so I suggest making and eating it fresh.
If you want to store them and eat them later, keep the breakfast smash tacos in an airtight container and keep them refrigerated for up to three days. Then, reheat them in the air fryer so that they are crispy again.
Keto Bacon Egg Sausage and Cheese Smash Tacos Recipe

Ingredients
- Zero Carb Tortillas
- Eggs
- Ground Breakfast Sausage
- Shredded Cheddar Cheese
- Bacon Pieces
- Salsa Verde
Directions
Crack the eggs into a skillet over medium high heat, and fry until done to your liking. Season with salt and pepper to taste, and set aside.
Form the breakfast sausage into four evenly sized patties, and press across the front of a zero carb tortilla.
Place the tortillas, meat side down, into a skillet over medium heat. Saute until the meat is cooked through. Flip the tortillas over, and saute for 1-2 minutes until crispy and browned. Remove and set aside.
Add a ¼ cup of cheese to a small circle in the skillet. Let it get mostly melted, and then place one of the tortillas sausage side down on top of the cheese.
Saute another few seconds, and then remove, and place the tortilla side down onto a plate.
Repeat step 4 until all tortillas have cheese on top of the sausage.
Top each smash taco with one of the eggs, and then sprinkle with the bacon pieces.
Drizzle with creamy salsa verde sauce before serving.
