Ingredients
4-6chicken thighs *With or without skin
1 1/2tbspolive oil *coconut oil works well too!
2minced garlic cloves
1tsppaprika
1tspcayenne pepper
Slat and pepper to taste
Cream Sauce
13ozsliced mushrooms
7 slicescooked and chopped bacon
1cupThai Coconut Milk
1tbspalmond flour
1tspDairy Free Butter (ghee or oil will also work)
4minced garlic cloves
Fresh ground pepper to taste
Optional Garnish
Red pepper flakes
Parsely
Instructions
Cook bacon, chop and set aside.
Season chicken.
Heat oil in a skillet.
Pan sear each side of chicken until brown and set aside.
Saute mushrooms in the same skillet, cook until soft.
In the same skillet as the mushrooms add ghee and stir in coconut milk, cook for 2-3 minutes. Add flour and quickly stir until thick. **Add more flour to thicken or more coconut milk for a soupier consistency.
Add chicken and bacon back to the skillet, add salt and pepper to taste and cook until heated through.
Garnish with red pepper flakes, parsley or even extra bacon!
