Ingredients

  • 5 large Whole Dill Pickles cut in half lengthwise
  • 5 pieces Bacon sliced and cut in half
  • 1/2 pound Ground Beef
  • 1/4 Onion Chopped
  • 2 tsp Minced Garlic
  • 2 ounces Cream Cheese softened
  • 1/2 cup Shredded Cheddar Cheese
  • Salt and Pepper to taste
  • BBQ Rub Seasoning

Instructions

  • Add the ground beef and onion to a skillet over medium high heat, and saute until the meat is browned and the onion has softened. Drain the excess grease.
  • Season the meat with salt and pepper to taste.
  • Preheat the oven to 425 degrees.
  • Deseed and hollow out the pickle halves.
  • Place the hot meat mixture in a mixing bowl with the garlic, cream cheese and cheddar cheese. Stir to combine well.
  • Stuff the pickle halves with the meat mixture.
  • Wrap a slice of bacon around the pickles, and place them seam side down on a parchment lined baking sheet.
  • Sprinkle the pickle poppers with BBQ rub seasoning.
  • Bake for 15-20 minutes, or until the bacon is done to your liking.
