5largeWhole Dill Picklescut in half lengthwise
5piecesBacon sliced and cut in half
1/2poundGround Beef
1/4Onion Chopped
2tspMinced Garlic
2ouncesCream Cheesesoftened
1/2cupShredded Cheddar Cheese
Salt and Pepperto taste
BBQ Rub Seasoning
Instructions
Add the ground beef and onion to a skillet over medium high heat, and saute until the meat is browned and the onion has softened. Drain the excess grease.
Season the meat with salt and pepper to taste.
Preheat the oven to 425 degrees.
Deseed and hollow out the pickle halves.
Place the hot meat mixture in a mixing bowl with the garlic, cream cheese and cheddar cheese. Stir to combine well.
Stuff the pickle halves with the meat mixture.
Wrap a slice of bacon around the pickles, and place them seam side down on a parchment lined baking sheet.
Sprinkle the pickle poppers with BBQ rub seasoning.
Bake for 15-20 minutes, or until the bacon is done to your liking.
