Keto BBQ Cheeseburger Meatballs

Ingredients

  • 1 pound Ground Beef
  • 1/2 cup Almond Flour
  • 1/4 cup Almond Milk
  • 1 large Egg
  • 2 tsp Mustard
  • 2 tbsp Sugar-Free Ketchup
  • 1/4 cup Chopped Dill Pickles
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1/2 cup Sugar-Free BBQ Sauce plus an extra 1/4 cup
  • 1 1/2 cups Shredded Colby Jack Cheese
  • 5 slices Bacon cooked and crumbled

Instructions

  • Mix together the almond flour and almond milk in a bowl, and let sit for a few minutes.
  • Knead together the ground beef, egg, mustard, ketchup, doll pickles, onion powder, garlic powder, almond flour mixture and salt and pepper to taste until well combined.
  • Form the meat mixture into evenly sized meatballs, and fry in a skillet over medium heat until done to your liking.
  • Preheat the oven to 350 degrees.
  • Layer the meatballs in a 9x9 baking dish.
  • Brush the meatballs with ½ cup of the bbq sauce.
  • Sprinkle with the cheese and bacon.
  • Bake until the cheese has melted.
  • Brush the meatballs with the remaining bbq sauce before serving.
