2cupsShredded Chicken
2cupsShredded Colby Jack cheese
1/3cupSugar-Free BBQ Sauce
1tbspOlive Oil
1large Jalapeno finely chopped
1/4Red Onion chopped
2tbspGreen Onions chopped
Instructions
Heat the oven to 400 degrees, and line a baking sheet with parchment paper.
Place the cheese into circles on the parchment lined baking sheet, leaving some room between each circle of cheese.
Heat the olive oil in a skillet over medium heat, and add in the chicken, red onion and jalapeno. Saute until the vegetables begin to soften. Set aside to cool down.
Place the baking sheet into the oven, and cook for 6-8 minutes until the edges are browned and crispy.
Remove and let the cheese circles cool for a few minutes.
Add a layer of filling down the center of each cheese circle.
Carefully roll the cheese up over the filling.
Allow the cheese to cool and crisp up.
Serve garnished with green onions.
