Ingredients

  • 2 cups Shredded Chicken
  • 2 cups Shredded Colby Jack cheese
  • 1/3 cup Sugar-Free BBQ Sauce
  • 1 tbsp Olive Oil
  • 1 large Jalapeno finely chopped
  • 1/4 Red Onion chopped
  • 2 tbsp Green Onions chopped

Instructions

  • Heat the oven to 400 degrees, and line a baking sheet with parchment paper.
  • Place the cheese into circles on the parchment lined baking sheet, leaving some room between each circle of cheese.
  • Heat the olive oil in a skillet over medium heat, and add in the chicken, red onion and jalapeno. Saute until the vegetables begin to soften. Set aside to cool down.
  • Place the baking sheet into the oven, and cook for 6-8 minutes until the edges are browned and crispy.
  • Remove and let the cheese circles cool for a few minutes.
  • Add a layer of filling down the center of each cheese circle.
  • Carefully roll the cheese up over the filling.
  • Allow the cheese to cool and crisp up.
  • Serve garnished with green onions.
