We all need brainlessly-easy recipes for those days when cooking feels like a chore. And that’s exactly what I made.

You won’t have to create the BBQ sauce from scratch or make complicated homemade wraps.
And you can even use rotisserie chicken or leftover chicken from other recipes! With only 2 grams net carbs in each one, this is a recipe that will go in your “must-make” pile.
It’s easy enough to whip up for a quick lunch, stores well for your weekly meal prep, and will even work as a filling entree for dinner. Do you need something for a party?

Oh, and bonus – it’s also gluten-free!
Keto Chicken Roll Ups
Do you have leftover cooked chicken breasts or things that you need to use up? Shred or chop it up and use it in this easy recipe.

These roll-ups are literally ready in like ten minutes.
What should you eat with them? That depends on when you’re eating it.
If you’re serving it for dinner, make some low carb cauliflower mash on the side. It has 5g net carbs per serving, so it can easily go with it.

Best Keto Wraps
There are two different ways to make keto-friendly wraps. You can either use low-carb tortillas or turn shredded cheese into zero-carb wraps.

I used tortillas when I made Keto Cheesy Beef Roll Ups, Crispy Low Carb Chocolate Chip Peanut Butter Roll Ups, and Keto Crispy Italian Sub Roll Ups. But they have more carbs in them, so that’s only an option if you have room in your macros.
For these roll-ups, I used shredded cheese as wraps. You basically melt cheese into the shape of a wrap and then wrap it around the chicken.
I did this when I made Keto Coleslaw Chicken Salad Roll Ups, Keto Spinach and Bacon Cream Cheese Roll Ups, and Keto In-N-Out Animal Style Burger Copycat Roll Ups With Sauce.
It only takes like 8 minutes to make these cheese wraps.
Keto BBQ Sauce
I kept this recipe really easy and used sugar-free BBQ sauce instead of making it homemade. It saves you so much time and energy but if you want to make homemade sauce, go ahead.

My favorite brand of sugar-free BBQ sauce is from G. Hughes. They have a few different flavors and all of them are 10/10!
I also added some jalapeno and red onion just to give it a bit of kick. If you want to make it even spicier, add some habanero peppers too.
You can always replace the colby jack cheese with pepper jack cheese or mix in some extra sharp cheddar cheese for even more flavor.
How To Store Chicken
The best way to add BBQ chicken roll-ups to your meal prep is to keep the chicken, peppers, and cheese in an airtight container. Then, all you have to do is make the cheese wraps and fill it with your BBQ chicken filling.

Can you store cheese wrap roll-ups after you make them? I don’t recommend it.
Because if you wanted to heat it back up, the cheese might melt. It’s better to make the cheese wraps fresh – especially since it only takes like 10 minutes (and it tastes so much better, too).

Ingredients:
- Shredded chicken
- Shredded colby jack cheese
- Sugar free bbq sauce
- Olive oil
- Large jalapeno finely chopped
- Red onion finely chopped
- Chopped green onions
Instructions:
Heat the oven to 400 degrees, and line a baking sheet with parchment paper.
Place the cheese into circles on the parchment lined baking sheet, leaving some room between each circle of cheese.

Heat the olive oil in a skillet over medium heat, and add in the chicken, red onion and jalapeno. Saute until the vegetables begin to soften. Set aside to cool down.

Place the baking sheet into the oven, and cook for 6-8 minutes until the edges are browned and crispy. Remove and let the cheese circles cool for a few minutes.

Add a layer of filling down the center of each cheese circle. Carefully roll the cheese up over the filling.

Allow the cheese to cool and crisp up. Serve garnished with green onions.
