1poundBoneless, Skinless Chicken Breastscut into bite-sized pieces
8ouncesMushroomssliced
1tbspOlive Oil
2tbspButterunsalted
2tspGarlicminced
1/2tspDried Basil
2tbspFresh Parsleychopped
1/2cupChicken Broth
1cupHeavy Whipping Cream
3tbspBlue Cheese Crumbles
Instructions
Heat the oil in a skillet over medium high heat on the stove.
Add the chicken bites to the skillet and season with salt and pepper. Cook until the chicken is completely done and seared on all sides. Remove and set aside.
To the same skillet, add the butter and sliced mushrooms. Saute over medium heat until the mushrooms are becoming tender.
Add the minced garlic and saute another 30 seconds.
Stir in the broth, basil, parsley and heavy whipping cream as well as more salt and pepper to taste. Simmer until the sauce has thickened.
Place the chicken back into the skillet and toss to coat in the sauce.
Add the blue cheese crumbles on top and serve.
