Ingredients

  • 1 1/2 pounds Boneless Skinless Chicken Thighs cut into bine-sized pieces
  • 2 tbsp Olive Oil
  • 2 tsp Minced Garlic
  • 1/2 cup Chicken Broth
  • 1/4 cup Bourbon
  • 3 tbsp Soy Sauce
  • 1/4 cup Swerve Brown Sugar Substitute
  • 2 tbsp Sugar-Free Ketchup
  • 1 tsp Ginger Paste
  • 1 tsp Onion Powder
  • Salt and pepper to taste
  • Green Onions chopped for garnish

Instructions

  • Season the chicken with salt and pepper to taste as well as the onion powder.
  • Heat the olive oil in a skillet over medium high heat, and sear the chicken until mostly cooked through.
  • Reduce the heat to medium.
  • In a bowl, whisk together the minced garlic, chicken broth, bourbon, soy sauce, brown sugar substitute, ketchup and ginger paste.
  • Pour the sauce into the skillet with the chicken, and toss to coat.
  • Continue to simmer until most of the liquid is absorbed.
  • Serve garnished with chopped green onion.
