Ingredients

  • 10 slices Keto-Friendly Bread 1 gram net carb each slice
  • 2 cups Unsweetened Almond Milk
  • 1 cup Heavy Whipping Cream
  • 4 large Eggs
  • 2 tbsp Melted Butter
  • 1 cup Swerve Confectioner's Sugar Substitute
  • 2 tsp Vanilla
  • 1 tsp Cinnamon
  • 1 pinch Nutmeg
  • 1/3 cup Chopped Walnuts

Instructions

  • Cut the bread slices into 1 inch cubes.
  • Add the bread pieces to a large mixing bowl.
  • In another bowl, whisk together the almond milk, heavy whipping cream, eggs, Swerve, vanilla, cinnamon and nutmeg until well combined.
  • Pour the mixture over the bread pieces, and allow to soak for 1 hour chilled, tossing every once in a while.
  • Preheat the oven to 350 degrees.
  • Add the butter to the bottom of a 9x9 baking dish.
  • Pour the bread mixture into the baking dish.
  • Sprinkle with the walnuts.
  • Bake for 30-40 minutes, or until the custard has set and the bread pudding is browned.
  • Allow to cool to room temperature before serving.
