What Is Bread Pudding
No, it isn’t like the snack pudding you might have eaten as a kid. It’s actually a sweet baked dish made with bread and nuts and people love to serve it during the holidays.
If you haven’t heard of bread pudding before, let me give you a quick introduction. Bread pudding is a classic and comforting dessert that originated in both Britain and France.
It’s made by combining stale or day-old bread with a mixture of milk, eggs, sugar, and various flavorings. Making it is one of the easiest things ever.
Just tear up some of that day-old bread, put it in your baking dish, and pour the custard on top. Oh, the custard is one of the best parts!
Classic bread pudding custard is sweet and spiced with cinnamon, nutmeg, vanilla, or raisins. Some recipes even pour caramel sauce on top.
I took this warm, moist, and slightly sweet dessert and turned into into something we can enjoy on the keto diet! The textures range from the caramelized and crunchy nuts to the soft and melty custard underneath.

Keto Bread Pudding
If you do a quick Google (or Pinterest) search for “low-carb bread pudding,” you’ll get a bunch of different recipes and ideas. And after trying some of my favorites, I tested and created a recipe that never fails.
All you need is keto-friendly bread and a few kitchen staples. In order to keep the net carbs at 3 grams per serving, I suggest using keto bread that has one gram net carb in each slice.
Nature’s Own has some (and it’s easy to find at the grocery store). That’s the secret to a reliably easy recipe – using ingredients that are easy to find.
I kept the ingredient list pretty short, which also gives you lots of room to change the recipe if you want. A few ways that you can change it include using almond extract instead of vanilla, using chopped pecans instead of walnuts, and using a teaspoon of pumpkin pie spice instead of cinnamon and nutmeg.
Sugar-Free Bread Pudding
Even if you or your family don’t eat keto, this is still a very healthy variation of classic bread pudding. Since it uses keto bread, almond milk, and heavy whipping cream, this is a wonderful source of healthy fats and protein.
Yes, it might look like a carb-fest, but there’s actually quite a bit of protein in it. Since it has all those healthy fats in it from the heavy cream and nuts, keto bread pudding is filling and will curb your sugar cravings, which will help you eat healthier.
Can you make it ahead of time? Yes!
This is a wonderful recipe to make for friends or family. To make it ahead of time, follow the instructions in the recipe card.
Then, let it cool to room temperature and store it in an airtight container in the refrigerator. Reheat and serve it within three days for the best results.

Can you eat bread pudding for breakfast? You sure can!
This actually kind of reminds me of a French Toast bake or a breakfast French Toast casserole. It’s also the perfect thing to serve at a brunch, too! It feeds a crowd and doesn’t taste at all like diet food.

How To Keep Bread Pudding
Whether you want to make it ahead of time or you made way too much and need to store the leftovers for later, here are my bread pudding storage tips.
Store your fully-baked keto bread pudding in an airtight container and keep it refrigerated. The bread pudding will soften the longer it stays in the refrigerator. So, it’s best to eat it within three days.
If you reheat it in the microwave, the bread pudding will soften quite a bit. I recommend reheating it in the air fryer or oven if you can.

Ingredients:
- Slices of keto sliced bread
- Almond milk
- Heavy whipping cream
- Large eggs
- Melted butter
- Swerve confectioners sugar substitute
- Vanilla
- Cinnamon
- Nutmeg
- Chopped walnuts
Instructions:
Cut the bread slices into 1 inch cubes.
Add the bread pieces to a large mixing bowl.
In another bowl, whisk together the almond milk, heavy whipping cream, eggs, Swerve, vanilla, cinnamon and nutmeg until well combined.
Pour the mixture over the bread pieces, and allow to soak for 1 hour chilled, tossing every once in a while.
Preheat the oven to 350 degrees. Add the butter to the bottom of a 9×9 baking dish.
Pour the bread mixture into the baking dish.
Sprinkle with the walnuts.
Bake for 30-40 minutes, or until the custard has set and the bread pudding is browned.
Allow to cool to room temperature before serving.

- 1/3 cup Chopped Walnuts
Instructions
