Ingredients

Keto Brussel Sprout Salad

  • 6 strips Bacon chopped
  • 2 pounds Brussel Sprouts thinly sliced
  • 1 Red Onion thinly sliced and chopped
  • Sliced Almonds
  • 5 Pitted Prunes chopped (optional ingredient)

Vinaigrette Dressing

  • 1 1/2 tbsp Red Wine Vineger
  • 1 1/2 tbsp Balsamic Vinegar
  • 1/2 tbsp Dijon Mustard ``
  • 1/2 tsp Swerve Brown Sugar Substitute
  • 1 tsp Salt
  • 1/4 tsp Pepper
  • 1/4 cup Olive Oil

Instructions

  • Add all the salad dressing ingredients to a mason jar with a lid, shake well, and refrigerate until you are ready to use it.
  • Chop your sprouts by holding the end of the stem and think slicing (crosswise) until you get close to stem. Rinse and dry again.
  • Add almonds, onions, bacon, and chopped sprouts to the bowl and toss it with dressing. Top it with extra bacon and dressing if needed!
