Ingredients

  • 14 ounces Andouille Sausage sliced
  • 1 tbsp Olive Oil
  • 1/2 Onion Chopped
  • 1 Orange Bell Pepper chopped
  • 1/2 cup Celery chopped
  • 2 tsp Minced Garlic
  • 3 cups Chopped Cabbage
  • 2 cups Cauliflower Rice cooked
  • 1 cup Diced Tomatoes
  • 1/2 cup Chicken Broth
  • 2 tsp Cajun Seasoning

Instructions

  • Heat the olive oil in a skillet over medium heat.
  • Mix in the onions, celery and peppers, and saute until the vegetables are a crisp tender.
  • Add in the sausage, and cook until browned.
  • Stir in the garlic and cajun seasoning, and saute for 30 seconds.
  • Pour in the broth and diced tomatoes.
  • Mix in the cabbage, cover and cook until the cabbage is tender.
  • Add in the cauliflower rice, and stir to combine.
  • Garnish with green onions before serving.
