14ouncesAndouille Sausage sliced
1tbspOlive Oil
1/2Onion Chopped
1Orange Bell Pepper chopped
1/2cupCelery chopped
2tspMinced Garlic
3cupsChopped Cabbage
2cupsCauliflower Rice cooked
1cupDiced Tomatoes
1/2cupChicken Broth
2tspCajun Seasoning
Instructions
Heat the olive oil in a skillet over medium heat.
Mix in the onions, celery and peppers, and saute until the vegetables are a crisp tender.
Add in the sausage, and cook until browned.
Stir in the garlic and cajun seasoning, and saute for 30 seconds.
Pour in the broth and diced tomatoes.
Mix in the cabbage, cover and cook until the cabbage is tender.
Add in the cauliflower rice, and stir to combine.
Garnish with green onions before serving.
