What Is Jambalaya
Jambalaya is a popular recipe in states that border the Gulf of Mexico, especially Louisiana. It’s a skillet recipe made with rice, vegetables, sausage, and a lot of heat!
Some people make it like a soup and others use shrimp or crawfish instead of sausage. Classic jambalaya isn’t keto-friendly because it’s made with a lot of tomatoes and rice.
Tomatoes could be ok on keto in small amounts, but rice is never ok on keto – unless you use cauliflower rice instead. And that’s exactly what I did!
Cabbage Jambalaya
One of the best ways to add flavor, texture, and nutrition to jambalaya (without adding a lot of carbs) is to mix in some shredded cabbage. Green cabbage has a sweet and earthy flavor that enhances the bold sausage and spicy Cajun seasoning.
If you aren’t a fan of cabbage, you can leave it out. All you have to do is double – or triple – the amount of cauliflower rice you used to have the texture you want (and it’s not just sausage and peppers).
Keto Jambalaya
There are six grams net carbs in each serving of keto jambalaya. This is a hearty recipe that’s a complete meal by itself.
This isn’t just keto-friendly. It’s also naturally gluten-free and dairy-free, too. It’s a perfect meal to make for most people with food allergies or intolerances.
I made a low-carb shrimp and sausage jambalaya recipe and it is still requested in my house. We love the bold flavors!
And just like that recipe states, there are a lot of different ways to customize the jambalaya. If you have carbs in your budget, add some squash or okra.
Okra is higher in carbs, so be aware before adding it.
What To Eat With Jambalaya
Honestly, you don’t have to add much to this recipe. It’s so filling – with the sausage, cabbage, and veggies.
Mozzarella stuffed meatballs are always a good idea. And for some bread, make some keto breadsticks.
I suggest serving some vegetables with the spicy jambalaya skillet. Keto Cajun cauliflower rice is a perfect match, but leave the sausage out since there is sausage in the jambalaya.
Some parmesan green beans and peppers will also taste incredible with the jambalaya.
How To Store Jambalaya
Use this jambalaya as part of your meal prep. I suggest eating it within the next three days to get the best texture and taste out of your cabbage.
Store your leftover cabbage jambalaya in an airtight container and keep it in the fridge for up to three days. You can freeze this recipe, too.
Store it in a freezer-safe food storage bag. Remove as much air as possible, then keep it in the freezer for up to six months.
Reheat the frozen dinner in a skillet over medium heat.

Directions
Heat the olive oil in a skillet over medium heat. Mix in the onions, celery and peppers, and saute until the vegetables are a crisp tender.
Add in the sausage, and cook until browned.
Stir in the garlic and cajun seasoning, and saute for 30 seconds.
Pour in the broth and diced tomatoes.
Mix in the cabbage, cover and cook until the cabbage is tender. Add in the cauliflower rice, and stir to combine.
Garnish with green onions before serving.
