2cupsShredded Mozzarella Cheese
1/3cupPesto Sauce
1/2cupFresh Spinach Leaves
1Roma Tomatochopped
8slicesDeli Sliced Turkey Breast
Instructions
Preheat the oven to 400 degrees.
Arrange the mozzarella cheese into 8 evenly sized circles on a large parchment or silicone mat lined baking sheet. Be careful to leave a bit of room between each circle to allow for expansion when cooking.
Bake for 6-8 minutes until the edges are browned and crispy.
Remove from the oven and let cool for 2-3 minutes.
Spread a layer of pesto down the center of each cheese circle.
Top the pesto with some spinach leaves, a turkey slice and some tomatoes.
Carefully roll the cheese circles closed around the filling to form rollups. This must be done when the cheese is still fairly hot and flexible.
Allow the rollups to cool and crisp up before serving.
