Ingredients

  • 2 cups Shredded Mozzarella Cheese
  • 1/3 cup Pesto Sauce
  • 1/2 cup Fresh Spinach Leaves
  • 1 Roma Tomato chopped
  • 8 slices Deli Sliced Turkey Breast

Instructions

  • Preheat the oven to 400 degrees.
  • Arrange the mozzarella cheese into 8 evenly sized circles on a large parchment or silicone mat lined baking sheet. Be careful to leave a bit of room between each circle to allow for expansion when cooking.
  • Bake for 6-8 minutes until the edges are browned and crispy.
  • Remove from the oven and let cool for 2-3 minutes.
  • Spread a layer of pesto down the center of each cheese circle.
  • Top the pesto with some spinach leaves, a turkey slice and some tomatoes.
  • Carefully roll the cheese circles closed around the filling to form rollups. This must be done when the cheese is still fairly hot and flexible.
  • Allow the rollups to cool and crisp up before serving.
