What Is Caprese Salad
Just like the name implies, Caprese salad is Italian. It’s usually made with fresh mozzarella, tomatoes, and fresh basil. Some people like to add balsamic glaze to it, but it’s traditionally seasoned with just salt and olive oil.
I stayed as close to the classic recipe as I could while also making something that is low in carbs and so filling that you can eat it for lunch.
Caprese Roll Ups
After discovering how easy it is to turn shredded cheese into a zero-carb wrap, I knew I had to make a Caprese wrap with them!
There are just 2 grams net carbs in each roll up. They are bursting with fresh flavor. And all those flavors taste even better when you use fresh food from the farmer’s market or your backyard garden.
I filled my roll-ups with pesto sauce and used baby spinach instead of sweet basil leaves. If you have an herb garden, try it with a few basil leaves. You’ll love how that turns out!
Even though Caprese salad is usually meat-free, I added some turkey meat. This made them a perfect lunch item and so much more filling.

Baked Cheese Wraps
Mozzarella is the best type of cheese to use as wraps. It melts perfectly and is easy to use after it’s melted. If you have time, I suggest shredded the mozzarella cheese.
Store-bought shredded cheese will work, but it has added anti-caking ingredients in it. If eating clean, whole foods is important to you, then I suggest avoiding pre-shredded cheese.

Cook Time: 6-8 minutes

Ingredients:
Shredded mozzarella cheese
Pesto sauce
Fresh spinach leaves
Roma tomato chopped
Deli sliced turkey breast
Preheat the oven to 400 degrees. Arrange the mozzarella cheese into 8 evenly sized circles on a large parchment or
silicone mat lined baking sheet. Be careful to leave a bit of room between each circle to allow for expansion when cooking.
Bake for 6-8 minutes until the edges are browned and crispy. Remove from the oven and let cool for 2-3 minutes.
Spread a layer of pesto down the center of each cheese circle.
Top the pesto with some spinach leaves, a turkey slice and some tomatoes.
Carefully roll the cheese circles closed around the filling to form rollups. This must be done when the cheese is still fairly hot and flexible.
