Ingredients

  • 6 Zero carb street taco sized tortillas
  • 6 ounces Cream Cheese softened
  • 1/4 cup Swerve Confectioner's Sugar Substitute
  • 1 Medium Carrot peeled and shredded
  • 1/2 tsp Cinnamon
  • 1 pinch Nutmeg
  • 1 pinch Ground Ginger
  • 1/3 cup Chopped Walnuts

Instructions

  • In a mixing bowl, blend together the cream cheese and Swerve.
  • Fold in the spices, carrots and walnuts until well combined.
  • Place a layer of filling down the center of each tortilla, and roll them closed around it.
  • Chill the rollups in the freezer for 30 minutes.
  • Place the rollups into the tray of the air fryer, and cook at 400 degrees until browned and crispy. Alternatively, you can lightly fry the rollups in some oil in a skillet over medium heat on the stovetop until crispy.
