Keto Carrot Cake Roll-Ups

If you’re dreaming of eating a carrot cake on the keto diet, these are the next best thing. I think they’re even better!

Keto Carrot Cake Roll-Ups

Compared to all the effort of mixing and baking a cake, these roll-ups are ready in 15-20 minutes. And instead of having to decorate and slice a cake, you can just pick these up with your hands and eat them! 

Carrot cake is one of the best springtime desserts. You’ll see it on a lot of Easter menus.

So I had to make a roll-up version that helps you stay within your macros. I’ve made other carrot cake desserts before, too.

Carrot Cake Roll-Ups 

Do you have a sweet tooth?  One of my favorite ways to keep my sugar cravings in check is to make low-carb versions of my favorite desserts.

Keto Carrot Cake Roll-Ups

These carrot cake roll-ups only have 3 grams net carbs in each serving. If you manage your macros correctly, you could enjoy two of them and feel completely satisfied! 

To make them, you’ll need some street-taco sized tortillas. I love the kinds from Mission brand.

They are zero carbs and taste just like flour tortillas. They’re perfectly soft and easy to use.

If you use a larger version, it will be more difficult to roll up and use.  

Dessert With Carrots

Yes, these carrot cake roll-ups are made with real carrots! To make them mix in with the filling perfectly, I used shredded carrot pieces.

Keto Carrot Cake Roll-Ups

Don’t use matchstick carrots. I suggest using a cheese grater and grating the carrots at home.

If you have a food processor, use it! It will shred the carrots into really thin, tiny pieces, too. 

The reason you need the carrots to be shredded is because you will only use a very small amount of them in the filling. Matchstick or sliced carrots are too thick and will stand out too much when you add them to the cream cheese mixture.  

Keto Carrot Dessert 

To make the carrot cake roll-ups taste like a classic carrot cake, use the correct spices. I used a combination of cinnamon, nutmeg, and ginger.

If you have some, you could use 1/2 a teaspoon of either pumpkin pie spice or apple pie spice instead. It has all the same ingredients (and a few extra ones that will still make the roll-ups taste amazing). 

You might see that I used walnuts, too. Just like a classic carrot cake, I added the chopped nuts to give it an authentic texture but if you don’t like nuts, then leave them out.

I suggest eating the roll-ups within three days. Store your air-fried roll-ups in an airtight container and keep them in the refrigerator.

Keto Carrot Cake Roll-Ups Recipe 

Here’s the list of the ingredients and steps that you’ll need to make this easy keto carrot cake roll-ups recipe. Exact measurements and instructions are located in the printable recipe card at the bottom of this post.

Net Carbs: 3 net carbs per serving

Keto Carrot Cake Roll-Ups Ingredients

Ingredients:

  • Zero carb street taco sized tortillas
  • Cream cheese softened
  • Swerve confectioners sugar substitute
  • Medium carrot peeled and shredded
  • Cinnamon
  • nutmeg
  • Ground ginger
  • Chopped walnuts

Instructions:

Cream cheese and powdered sugar substitute

In a mixing bowl, blend together the cream cheese and Swerve.

Chopped Walnuts

Fold in the spices, carrots and walnuts until well combined. Place a layer of filling down the center of each tortilla, and roll them closed around it.

Keto Carrot Cake Roll-Ups

Chill the rollups in the freezer for 30 minutes.

Keto Carrot Cake Roll-Ups

Place the rollups into the tray of the air fryer, and cook at 400 degrees until browned and crispy. Alternatively, you can lightly fry the rollups in some oil in a skillet over medium heat on the stovetop until crispy.
