Ingredients
3cupsRiced Caulflower
1/3cupSugar-Free Dried Cranberries
1/3cupChopped Roasted Walnuts
2tbspChopped Parsley
2tbspChopped Red Onions
2tbspOlive Oil
1tbspWhite Wine Vinegar
Instructions
Cook the riced cauliflower until crisp tender. Drain well.
Add the cauliflower rice, cranberries, walnuts, parsley and red onion to a mixing bowl, and stir to combine.
In a small bowl, whisk together the oil, vinegar and salt and pepper to taste.
Pour the vinaigrette over the cauliflower mixture, and toss to combine well.
Serve immediately, or chill before serving if desired.
