Ingredients

  • 3 cups Riced Caulflower
  • 1/3 cup Sugar-Free Dried Cranberries
  • 1/3 cup Chopped Roasted Walnuts
  • 2 tbsp Chopped Parsley
  • 2 tbsp Chopped Red Onions
  • 2 tbsp Olive Oil
  • 1 tbsp White Wine Vinegar

Instructions

  • Cook the riced cauliflower until crisp tender. Drain well.
  • Add the cauliflower rice, cranberries, walnuts, parsley and red onion to a mixing bowl, and stir to combine.
  • In a small bowl, whisk together the oil, vinegar and salt and pepper to taste.
  • Pour the vinaigrette over the cauliflower mixture, and toss to combine well.
  • Serve immediately, or chill before serving if desired.
