Keto Cauliflower Pizza Bites

Ingredients

  • 2 cups Cauliflower Rice drained well
  • 1/4 cup Parmesan Cheese grated
  • 1/2 tsp Italian Seasoning
  • 1/2 tsp Garlic Powder
  • 1 large Egg
  • 1/2 cup Low-Carb Marinara Sauce
  • 1 1/2 cups Mozzarella Cheese shredded
  • 1/4 cup Mini Pepperoni Slices

Instructions

  • Preheat the oven to 350 degrees.
  • Place the riced cauliflower, parmesan cheese, Italian seasoning, garlic powder, egg and salt and pepper to taste in a mixing bowl, and combine well.
  • Add a spoonful of the cauliflower rice mixture into the bottom of the sections of a well greased muffin pan. Press the mixture down firmly into the bottom of each section.
  • Bake for 15 minutes.
  • Remove, and top the crusts with the sauce, then the mozzarella and finally the mini pepperoni slices.
  • Bake for another 10 minutes.
  • Let cool before removing from the tin and serving.
