Keto Pizza Bites
Sometimes you aren’t in the mood for an entire pizza. When the pizza cravings hit but you just want a little snack, these cauliflower pizza bites are the answer! Make some extras and keep them in the refrigerator so that you always have them around.
You can’t go wrong with these little pizza bites. There are only 1 gram net carbs in each one. You can eat a bunch of them for lunch and still have carbs left over to eat some keto garlic knots or a bowl of chocolate mousse.
Cauliflower Pizza Bites
If you have a food processor, you can make your own cauliflower crust with fresh cauliflower. If you don’t, it’s ok. Buy some cauliflower rice from the freezer section. Make sure you remove as much water and moisture as possible from the steamed and frozen cauliflower rice.
Any leftover water will affect the pizza crust. The dryer the cauliflower rice, the better it will all stick together.
You should also grate your parmesan cheese at home. Every bag of shredded parmesan cheese always has a tiny bit of additives in it. You’ll notice a fuller and fresher flavor when you grate fresh parmesan cheese at home.
Keto Pizza Snack
The easiest way to make bite-sized mini pizzas is to fill the bottom of a muffin tin with the crust ingredients and then add the toppings.
You don’t have to use a muffin tin. Try a mason jar lid rings on a baking sheet and fill the rings with the cauliflower pizza crust and toppings.
You just need to ensure that each pizza bite is the same size so that they bake evenly. You don’t want half of them to be undercooked and the other half to be burning.
Keto Cauliflower Pizza Crust
Lots of spices is the secret to a tasty cauliflower pizza crust. I flavored my crust with garlic powder and Italian seasoning. If you want to enhance the flavor, add a dash of oregano and parsley.
Pay close attention to the nutrition label when you buy marinara or pizza sauce. Only buy varieties that are used without added sugars and have a low carb count. Or make your own marinara sauce with tomato paste, Italian seasoning, a dash of vinegar, and a pinch or drop of keto sweetener.
Easy Keto Snack
I used two basic toppings for these mini pizzas – mozzarella cheese and mini pepperoni slices. The best thing about these pizzas is that you can make them however you want. Add a slice of pineapple to them.
Top them with some fresh spinach. Or make them spicier with some poblano or jalapeno peppers!
These little pizzas are the perfect thing to add to your meal prep. Store them in an airtight container in the refrigerator for up to three days. Warm them up in a toaster oven or air fryer to keep them crispy.

Ingredients:
Riced cauliflower
Parmesan cheese grated
Italian seasoning
Garlic powder
Large egg
Salt and pepper
Low carb marinara sauce
Mozzarella cheese shredded
Mini Pepperoni slices
Instructions:
Preheat the oven to 350 degrees.
Place the riced cauliflower, parmesan cheese, Italian seasoning, garlic powder, egg and salt and pepper to taste in a mixing bowl, and combine well.
Add a spoonful of the cauliflower rice mixture into the bottom of the sections of a well greased muffin pan. Press the mixture down firmly into the bottom of each section.
Bake for 15 minutes.
Top the crusts with the sauce, then the mozzarella and finally the mini pepperoni slices.
Bake for another 10 minutes.
Let cool before removing from the tin and serving.

Instructions
