Heat the oven to 400 degrees, and line a baking sheet with parchment paper.
Place the cauliflower florets onto the baking sheet, and drizzle with the olive oil.
Season the cauliflower with salt and pepper to taste.
Bake for 15-20 minutes until the cauliflower is a crisp tender.
Add the sausage, onions, celery and carrots to a skillet over medium high heat. Saute until the meat is completely browned, and the vegetables have softened.
Drain any excess grease.
Stir in the garlic and saute for 30 seconds longer.
Stir together the florets, sausage mixture, butter, sage and poultry seasoning in a mixing bowl.
Layer the mixture into a 9x13 baking dish, and bake for 10 minutes at 350 degrees.
