Keto Thanksgiving Stuffing
The stuffing (or dressing) is one of the most iconic side dishes at Thanksgiving. It almost feels wrong to make a Thanksgiving dinner without some form of stuffing or dressing.

When you’re on a keto diet, that bread-based side dish is a no-go. So, I created a stuffing recipe that tastes just like the kind you know and love but I used cauliflower instead of bread.
This recipe makes five servings. If you’re going to feed a large extended family, you might want to double the recipe.
The best news is that there are only 4 grams net carbs in each serving! This is a delicious way to eat more vegetables.
Stuffing Without Bread
So, how do you make stuffing without bread? Honestly, this should probably be called dressing.

This is because stuffing literally describes a bunch of ingredients that you stuff inside a turkey. Anything that you make on the side or in a separate container is called dressing.
Ok, so how do you make dressing without bread? Traditionally, stuffing or dressing is made with old, stale bread soaked in broth and spices to taste better.
Replacing the stale bread with raw broccoli is the best way to make a low-carb version of a Thanksgiving favorite. It soaks up all the spices and flavors perfectly and won’t taste like regular cauliflower!
Cauliflower Stuffing
One of the best things about this cauliflower recipe is that I used traditional stuffing or dressing ingredients and spices. Start out with the mirepoix – the aromatic combination of onions, celery, and carrots.

Then, flavor everything with sage and poultry seasoning. This is what makes it taste like turkey and Thanksgiving.
For the best mouthfeel, I suggest chopping the cauliflower into tiny pieces and only cooking the florets. The florets taste so much better than the woody stalks.
Chopping up a head of cauliflower can get pretty messy. To save time, I suggest grabbing some pre-chopped cauliflower from the grocery store.
Keto Thanksgiving Recipes
Keto-friendly cauliflower stuffing is the perfect recipe to add to your Thanksgiving menu. Start with either slow cooker butter basted turkey legs or keto roast turkey.

The turkey legs are easier and quicker, but the roast turkey is classic.
Then, make the sides. Add the green bean bundles to the table with some keto cauliflower stuffing and some loaded cauliflower mash!
If you’re feeding a lot of people, add a keto brussels sprouts casserole to the meal. Then, for dessert, make some no-bake keto pecan pie bars, or keto apple pie and low carb pumpkin pie tacos.
How To Store Cooked Cauliflower
You can make this recipe ahead of time or store leftovers and eat them throughout the week. Store the cooked cauliflower stuffing in an airtight container in the refrigerator, and eat it within three days.

This is one recipe that tastes really good when you reheat it in the microwave. It will soften the cauliflower and make it nice and tender.

Ingredients
- Natural Ground Italian Sausage
- Onions
- Celery
- Carrots
- Garlic
- Sage
- Poultry Seasoning
- Butter
- Olive Oil
- Cauliflower Florets
- Salt and Pepper
Directions

Heat the oven to 400 degrees, and line a baking sheet with parchment paper. Place the cauliflower florets onto the baking sheet, and drizzle with the olive oil.
Season the cauliflower with salt and pepper to taste. Bake for 15-20 minutes until the cauliflower is a crisp tender.

Add the sausage, onions, celery and carrots to a skillet over medium high heat. Saute until the meat is completely browned, and the vegetables have softened. Drain any excess grease.
Stir in the garlic and saute for 30 seconds longer.

Stir together the florets, sausage mixture, butter, sage and poultry seasoning in a mixing bowl.

Layer the mixture into a 9×13 baking dish, and bake for 10 minutes at 350 degrees.
