1 1/2poundsBoneless Skinless Chicken Thighs cut into bite sized pieces
2cupsBroccoli Florets
2cupsCauliflower Florets
2tbspOlive Oil
2tbspButter
1/2Onion chopped
1/2tspGarlic Powder
1/2tspOnion Powder
1cupHeavy Whipping Cream
1/4cupChimichurri Sauce
1cupShredded Cheddar Cheese
Salt and Pepperto taste
Instructions
Heat the olive oil in a skillet over medium high heat.
Season the chicken with garlic powder, onion powder and salt and pepper to taste.
Sear the chicken until cooked through. Remove and set aside.
To the same skillet, at the butter over medium heat.
Stir in the onion, broccoli and cauliflower, cover and simmer until they are steamed and softened. A bit of water can be added to the skillet at this time if needed.
Remove the lid, stir in the chimichurri sauce and heavy whipping cream. Simmer until the sauce has thickened.
Return the chicken to the skillet, and stir to combine.
Sprinkle with the cheddar cheese, allow it to melt and serve.
