Ingredients

  • 1 1/2 pounds Boneless Skinless Chicken Thighs cut into bite sized pieces
  • 2 cups Broccoli Florets
  • 2 cups Cauliflower Florets
  • 2 tbsp Olive Oil
  • 2 tbsp Butter
  • 1/2 Onion chopped
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1 cup Heavy Whipping Cream
  • 1/4 cup Chimichurri Sauce
  • 1 cup Shredded Cheddar Cheese
  • Salt and Pepper to taste

Instructions

  • Heat the olive oil in a skillet over medium high heat.
  • Season the chicken with garlic powder, onion powder and salt and pepper to taste.
  • Sear the chicken until cooked through. Remove and set aside.
  • To the same skillet, at the butter over medium heat.
  • Stir in the onion, broccoli and cauliflower, cover and simmer until they are steamed and softened. A bit of water can be added to the skillet at this time if needed.
  • Remove the lid, stir in the chimichurri sauce and heavy whipping cream. Simmer until the sauce has thickened.
  • Return the chicken to the skillet, and stir to combine.
  • Sprinkle with the cheddar cheese, allow it to melt and serve.
