Keto Chimichurri
There are two types of chimichurri – red and green. Originating in Argentina, this zesty sauce can be used cooked or uncooked and is usually used to flavor meat.
For my chimichurri chicken, I used green chimichurri. You can make your own chimichurri, but you can also just buy it jarred.
It’s a keto-friendly condiment, made with olive oil, red wine vinegar, finely chopped parsley, oregano, garlic, and seasonings. When you add it to chicken, the results are phenomenal!
It’s bursting with powerful flowers that make you drool as it simmers.
Chimichurri Chicken
For this recipe, I suggest using boneless skinless chicken thighs. As they cook, they will soak up the flavors of the chimichurri sauce and will be extra tender and juicy.
If you want to use chicken breasts, use a little more chimichurri sauce to prevent them from drying out.
You can also change up the veggies that you use. I love the combination of broccoli and cauliflower, but replace them with zucchini and squash. And instead of cheddar cheese, added some spice with cheddar jack cheese.
Or go to the speciality cheese section and use cheese with jalapeno. That will kick it up!
Chicken Broccoli Skillet
Can you make cheesy chimichurri chicken in the slow cooker? Yes, you can!
I suggest waiting until the last hour before you add the heavy whipping cream. Heavy cream doesn’t cook well in a slow cooker.
Honestly, a skillet is the best way to cook creamy, cheesy chicken. It only takes 30 minutes for the entire recipe to cook. If you want to be safe, make sure the chicken reaches an internal temperature of 165F.
What To Eat With Chicken
This cheesy chimichurri chicken recipe is bursting with incredible flavors. It doesn’t take much to make a complete meal with it, especially since it already has chicken, broccoli, and cauliflower.
For a really colorful (and filling) meal, start out with some keto TikTok mini peppers and cucumber salad. It’s refreshing and zesty.
For something cold, add some easy keto broccoli salad to the table. Some keto dinner rolls and fluffy cauliflower mash will also taste perfect with the cheesy skillet dinner.
Other sides to add to the table include garlic knots, or keto breadsticks. Just add your favorite low-carb breads to the side and dinner is ready.
Easy Chicken Skillet Meal
This is a perfect recipe to add to your keto meal prep for the week. Separate the meal into equal servings and store them in separate airtight food storage containers.
Chimichurri chicken will stay fresh in the refrigerator for about three days.
Reheat it in the microwave or on the stove. It will melt the cheese and make it taste yummy again. Add more cheese if you want it be gooey and delicious again.

Ingredients

- Onion
- Garlic Powder
- Onion Powder
- Heavy Whipping Cream
- Chimichurri Sauce
- Shredded Cheddar Cheese
Directions
Heat the olive oil in a skillet over medium high heat. Season the chicken with garlic powder, onion powder and salt and pepper to taste.
Sear the chicken until cooked through. Remove and set aside. To the same skillet, at the butter over medium heat.
Stir in the onion, broccoli and cauliflower, cover and simmer until they are steamed and softened. A bit of water can be added to the skillet at this time if needed.
Remove the lid, stir in the chimichurri sauce and heavy whipping cream. Simmer until the sauce has thickened.
Return the chicken to the skillet, and stir to combine.
Sprinkle with the cheddar cheese, allow it to melt and serve.

- 2 cups Broccoli Florets
- 2 cups Cauliflower Florets
- 2 tbsp Olive Oil

- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1 cup Heavy Whipping Cream
- 1/4 cup Chimichurri Sauce
