Keto Cheesy Crockpot Chicken and Broccoli Casserole

Serve it on top of mashed cauliflower, or by itself - either way, this keto cheesy slow cooker chicken is perfect for dinner anytime.

Ingredients

  • 30 ounces Frozen Broccoli
  • 3 cups Shredded Chicken
  • 2 tbsp Butter
  • 1/2 Onion chopped
  • 2 tsp Minced Garlic
  • 1 1/2 cups Heavy Whipping Cream
  • 1 cup Almond Milk
  • Salt and pepper to taste
  • 1/4 cup Chopped Green Onions
  • 2 cups Shredded Cheddar Cheese

Instructions

  1. Add the broccoli, chicken and green onions to a Crockpot.

  2. Melt the butter in a saucepan over medium heat.

  3. Stir the onions into the saucepan, and saute until beginning to soften.

  4. Mix in the garlic, and saute 30 seconds.

  5. Pour in the heavy whipping cream, almond milk and salt and pepper to taste.

  6. Simmer until the mixture thickens.

  7. Pour the sauce over the ingredients in the Crockpot, and top with the cheese.

  8. Cover, and cook on high for 2 hours.
