Mix together the pork rind crumbs, garlic powder, Italian seasoning, cayenne and salt and pepper to taste in a shallow bowl or plate.
Whisk the egg into a bowl.
Dip the chicken breasts into the egg, and then coat in the crumb mixture.
Place the coated chicken into the tray of an air fryer and cook at 360 degrees for 14-16 minutes, or until browned and cooked through completely.
While the chicken is cooking, melt the butter in a skillet over medium heat.
Stir in the onions, and saute until tender.
Mix in the garlic and palmini noodles, and saute for 1 minute.
Pour in the heavy whipping cream, and simmer until thickened.
Add in the parmesan cheese, and stir to combine.
Toss in the spinach, cover and cook until wilted.
Season with salt and pepper to taste.
Slice the cooked chicken, and serve over the spinach pasta.
