Keto Chicken and Spinach Pasta

Ingredients

  • 1 bag palmini noodles rinsed and drained well
  • 2 tbsp Butter
  • 1/2 Onion chopped
  • 2 tsp Minced Garlic
  • 1 cup Heavy Whipping Cream
  • 4 cups Raw Spinach
  • 1/2 cup Parmesan Cheese grated
  • Salt and Pepper to taste
  • 2 Boneless Skinless Chicken Breasts
  • 1 large Egg
  • 1 1/2 cups Pork Rind Crumbs
  • 1 tsp Italian Seasoning
  • 1 tsp Garlic Powder
  • Cayenne Pepper to taste

Instructions

  • Mix together the pork rind crumbs, garlic powder, Italian seasoning, cayenne and salt and pepper to taste in a shallow bowl or plate.
  • Whisk the egg into a bowl.
  • Dip the chicken breasts into the egg, and then coat in the crumb mixture.
  • Place the coated chicken into the tray of an air fryer and cook at 360 degrees for 14-16 minutes, or until browned and cooked through completely.
  • While the chicken is cooking, melt the butter in a skillet over medium heat.
  • Stir in the onions, and saute until tender.
  • Mix in the garlic and palmini noodles, and saute for 1 minute.
  • Pour in the heavy whipping cream, and simmer until thickened.
  • Add in the parmesan cheese, and stir to combine.
  • Toss in the spinach, cover and cook until wilted.
  • Season with salt and pepper to taste.
  • Slice the cooked chicken, and serve over the spinach pasta.
