Keto Chicken Pasta
If you’ve made any of my other keto pasta recipes, you probably already know how much I love using Palmini noodles. It’s so easy – just open the can, drain and rinse them, and heat them up.

That’s it! But since they’re made from hearts of palm, their texture takes a bit of getting used to.
Some keto dieters might want to replace them with zucchini noodles for a more familiar taste and texture.
If you want to speed up the cooking process, make a few things ahead of time. Make the breaded chicken and the alfredo sauce ahead of time.
Store them in separate containers. Then, all you have to do is heat them up together in a skillet and serve!
Keto Breaded Chicken
I’ve made keto breaded chicken with almond flour before and while that turns out really good (and has more protein), I love the crispiness from pork rind crumbs so much more.

Remember to use plain pork rind crumbs. Other flavors might have hidden carbs in them.
When you air fry the chicken, they will come out perfectly crispy on the outside and juicy on the inside. But always check the internal temperature to make sure they’re fully cooked.
Chicken needs to be 165F to be safe to eat.
How To Store Cooked Chicken
This is the best recipe to add to your meal prep! Place everything in the same meal prep airtight container.

Keep it all in the refrigerator and eat it within three days. If you use the microwave, the chicken might soften a bit, but it still tastes really good.
You can freeze this recipe, too. Place it in a freezer-safe bag or food storage container.
Keep it in the freezer for up to six months.

Keto Chicken and Spinach Pasta Recipe

Ingredients:
- Palmini noodles rinsed and drained well.
- Butter
- Onion chopped
- Minced garlic
- Heavy whipping cream
- Raw spinach
- Parmesan cheese grated
- Salt and pepper to taste
- Boneless skinless chicken breasts
- Large egg
- Pork rind crumbs
- Italian seasoning
- Garlic powder
- Cayenne pepper to taste
Instructions:

Mix together the pork rind crumbs, garlic powder, Italian seasoning, cayenne and salt and pepper to taste in a shallow bowl or plate.

Whisk the egg into a bowl. Dip the chicken breasts into the egg, and then coat in the crumb mixture.

Place the coated chicken into the tray of an air fryer and cook at 360 degrees for 14- 16 minutes, or until browned and cooked through completely.

While the chicken is cooking, melt the butter in a skillet over medium heat. Stir in the onions, and saute until tender.

Mix in the garlic and palmini noodles, and saute for 1 minute. Pour in the heavy whipping cream, and simmer until thickened. Add in the parmesan cheese, and stir to combine.

Toss in the spinach, cover and cook until wilted. Season with salt and pepper to taste.

Slice the cooked chicken, and serve over the spinach pasta.
