Ingredients

  • 2 cups Shredded Colby Jack Cheese
  • 2 cups Shredded Chicken
  • 4 ounces Cream Cheese softened
  • 2 tsp Ranch Seasoning
  • 2 tbsp Chopped Parsley
  • 3 strips Bacon cooked and crumbled
  • 2 tbsp Ranch Dressing for dipping

Instructions

  • Heat the oven to 400 degrees.
  • Line a baking sheet with parchment paper.
  • Arrange the colby jack cheese into 8 circles on the parchment paper lined baking sheet, leaving some room between each circle. You may need to use two baking sheets for this.
  • Bake for 8-10 minutes, or until the edges of the cheese circles are turning brown and crispy.
  • While the cheese is baking, mix together the chicken, ranch seasoning, bacon, cream cheese and parsley in a bowl until well combined.
  • Remove the cheese from the oven and let cool slightly.
  • Place a layer of filling down the center of each cheese circle.
  • Carefully roll the cheese up and over the filling.
  • Allow the rollups to cool and harden a bit before serving.
