5Thinly cut chicken breast cutlets
1 1/2cupsPork Rind Crumbs
1/3cupParmesan Cheesegrated
1/2tspItalian Seasoning
Salt and Pepper to taste
Oil for frying
2cupsShredded Romaine Lettuce
2piecesKeto Bread sliced
1tbspOlive Oil
1/4tspGarlic Powder
1/4cupParmesan Cheese shredded
2tbspCaesar Dressing
Instructions
Cut the bread into cubes, and place into the air fryer or oven at 400 degrees until browned and crunchy.
Drizzle the olive oil over the top of the croutons, and then toss in the garlic powder. Set aside.
Whisk the eggs in a mixing bowl.
Place the pork rind crumbs, grated parmesan cheese, Italian seasoning and salt and pepper to taste on a plate, and stir to combine.
Heat a few inches of oil in a large skillet.
Dip the chicken cutlets in the eggs, and then coat in the crumb mixture.
Place the coated chicken into the heated oil, and cook evenly on both sides until browned and cooked through completely.
Top the chicken cutlets with shredded romaine lettuce.
Add some of the croutons, shredded parmesan and drizzle on some caesar dressing before serving.
