Equipment

  • Whisk
  • Mixing Bowl

Ingredients

  • 5 Thinly cut chicken breast cutlets
  • 1 1/2 cups Pork Rind Crumbs
  • 1/3 cup Parmesan Cheese grated
  • 1/2 tsp Italian Seasoning
  • Salt and Pepper to taste
  • Oil for frying
  • 2 cups Shredded Romaine Lettuce
  • 2 pieces Keto Bread sliced
  • 1 tbsp Olive Oil
  • 1/4 tsp Garlic Powder
  • 1/4 cup Parmesan Cheese shredded
  • 2 tbsp Caesar Dressing

Instructions

  • Cut the bread into cubes, and place into the air fryer or oven at 400 degrees until browned and crunchy.
  • Drizzle the olive oil over the top of the croutons, and then toss in the garlic powder. Set aside.
  • Whisk the eggs in a mixing bowl.
  • Place the pork rind crumbs, grated parmesan cheese, Italian seasoning and salt and pepper to taste on a plate, and stir to combine.
  • Heat a few inches of oil in a large skillet.
  • Dip the chicken cutlets in the eggs, and then coat in the crumb mixture.
  • Place the coated chicken into the heated oil, and cook evenly on both sides until browned and cooked through completely.
  • Top the chicken cutlets with shredded romaine lettuce.
  • Add some of the croutons, shredded parmesan and drizzle on some caesar dressing before serving.
