Basically, instead of cutting up the chicken and adding it to a bed of lettuce, you add the lettuce on top of the crispy, fried chicken cutlets.

Crispy Chicken Cutlets
I have a lot of keto air fryer recipes – so you know I love using my air fryer! But there’s one thing you don’t get when you use your air fryer.
And that’s the slightly-greasy coating on the edges of crumb coating. That’s why I fried the chicken in a lot of oil in a skillet but if you don’t want to cook with hot oil, you can air fry the chicken instead.
Is this recipe good for your meal prep? Yes, as long as you store each part separately.
Store the chicken and salad in different containers. Keep everything refrigerated and eat it within three days.
To keep the chicken nice and crispy, reheat it in the air fryer.
Keto Chicken Cutlets
To get the chicken nice and thin, I used chicken breasts. They’re the easier cut of meat to cut into thin cutlets.
Can you use chicken thighs instead? I don’t recommend it, unless you want to make smaller pieces.
Chicken thighs are difficult to slice uniformly.
Whether you use chicken breasts or chicken thighs, it’s important to cook chicken completely. That means using an instant read food thermometer.
Chicken should be cooked until it is 165 degrees F.
Keto Breading for Chicken
What is the best type of breading for frying chicken? I love the combination of pork rind crumbs and parmesan cheese.
It’s easy, simple, and you can find the ingredients at every store. Plus, the pork rind crumbs are so salty that you don’t have to add more salt.
What are some alternatives to pork rind crumbs? You could use almond flour or keto breadcrumbs instead of pork rinds.
They won’t have as much flavor – and won’t be as cripsy – but they will work in a pinch.
What To Eat With Chicken
If you want to add anything to the side, keep it simple. You might like a serving of keto garlic shrimp au gratin – it’s perfectly cheesy.
Keto baked au gratin asparagus is also delightfully cheesy, too!

Ingredients:
- Thinly cut chicken breast cutlets
- Pork rind crumbs
- Parmesan cheese grated
- Italian seasoning
- Salt and pepper to taste
- Oil for frying
- Shredded romaine lettuce
- Sliced keto bread
- Olive oil
- Garlic powder
- Shredded parmesan cheese
- Caesar dressing
Instructions:
Cut the bread into cubes, and place into the air fryer or oven at 400 degrees until browned and crunchy. Drizzle the olive oil over the top of the croutons, and then toss in the garlic powder. Set aside.
Whisk the eggs in a mixing bowl.
Place the pork rind crumbs, grated parmesan cheese, Italian seasoning and salt and pepper to taste on a plate, and stir to combine.
Heat a few inches of oil in a large skillet. Dip the chicken cutlets in the eggs, and then coat in the crumb mixture.
Place the coated chicken into the heated oil, and cook evenly on both sides until browned and cooked through completely.
Top the chicken cutlets with shredded romaine lettuce.
Add some of the croutons, shredded parmesan and drizzle on some caesar dressing before serving.
