1poundBoneless Skinless Chicken Breastscut into bite-sized chunks
1cupPork Rind Crumbs
1/4cupParmesan Cheesegrated
1/4tspGarlic Powder
1largeEgg
3tbspHeavy Whipping Cream
4slicesDeli Hamcut into squares
3slicesSwiss Cheesecut into 6 squares each
Instructions
Preheat the oven to 400 degrees.
In a shallow bowl, combine the pork rind crumbs, parmesan cheese, garlic powder and salt and pepper to taste.
In a bowl, whisk together the egg and heavy whipping cream.
Dip the chunks of chicken into the egg mixture and then coat in the crumb mixture.
Place the breaded chicken onto a parchment lined baking sheet.
Bake for 15 minutes, or until browned and cooked through.
Remove from the oven and top each piece of chicken with ham and a square of cheese.
Place the chicken bites under the broiler until the cheese has melted.
