Ingredients

  • 1 pound Boneless Skinless Chicken Breasts cut into bite-sized chunks
  • 1 cup Pork Rind Crumbs
  • 1/4 cup Parmesan Cheese grated
  • 1/4 tsp Garlic Powder
  • 1 large Egg
  • 3 tbsp Heavy Whipping Cream
  • 4 slices Deli Ham cut into squares
  • 3 slices Swiss Cheese cut into 6 squares each

Instructions

  • Preheat the oven to 400 degrees.
  • In a shallow bowl, combine the pork rind crumbs, parmesan cheese, garlic powder and salt and pepper to taste.
  • In a bowl, whisk together the egg and heavy whipping cream.
  • Dip the chunks of chicken into the egg mixture and then coat in the crumb mixture.
  • Place the breaded chicken onto a parchment lined baking sheet.
  • Bake for 15 minutes, or until browned and cooked through.
  • Remove from the oven and top each piece of chicken with ham and a square of cheese.
  • Place the chicken bites under the broiler until the cheese has melted.
