What Is Chicken Cordon Bleu
Also called a schnitzel cordon bleu is basically a type of meat that is wrapped around cheese and then either deep-fried or pan-fried. The most popular type of cordon bleu is chicken that is wrapped around ham and swiss cheese.
Fun fact: even though the name comes from the French term for blue ribbon, this recipe actually comes from Switzerland. That’s where they call it schnitzel!
Keto Chicken Cordon Bleu
My chicken cordon bleu bites have the same authentic taste and ingredients as the popular fried versions – I just changed the breading. To keep my cordon bleu low in carbs, I breaded them with pork rind crumbs and didn’t deep-fry them.
You can use any type of cheese that you like. They are traditionally made with swiss cheese because it really brings out the natural sweetness of the ham and chicken. You could substitute with mozzarella or white cheddar instead.
Is Chicken Cordon Bleu Keto-Friendly
The chicken cordon bleu that you buy from the frozen section of the grocery store or that you might order at the restaurant is not keto-friendly. It is usually made with breadcrumbs and deep-fried.
That is why I made my own version! There are 4 cordon bleu bites in each serving, and each serving only has 1g net carb!
Baked Chicken Cordon Bleu Keto
This baked chicken cordon bleu is perfect for the holidays. In fact, you can serve it as an appetizer with festive color forks or picks when you host a holiday party!
Baked chicken cordon bleu isn’t specifically a holiday dish, so you can cook it for any meal or party that you host. The entire recipe only takes about 35 minutes to make, from prep to finish! So you can focus on other parts of party prep and know that the food is taken care of.
Chicken Cordon Bleu Bites
You can also make these ahead of time and store them in the freezer. If you want to freeze them, I suggest cooking them completely, then letting them cool off to room temperature. Then, set them on a baking sheet in a single layer and place the baking sheet in the freezer. After the chicken cordon bleu is completely frozen, you can take them off the baking sheet and place them in a freezer-safe resealable food storage bag.
Now they are ready for you to grab one whenever you need it!
You can also store them in the refrigerator in an airtight food storage container. They will stay fresh for up to 3 days.
Air Fryer Chicken Cordon Bleu Bites
You can easily make these little bites in the air fryer too! Just preheat your air fryer to 400°F. Then, follow the instructions in the printable recipe card. The baking times are the same whether you bake them in the oven or in the air fryer.
Always check the internal temperature of the chicken to make sure it is completely cooked. The safe cooking temperature of chicken is 165°F.

Ingredients:
Boneless Skinless Chicken Breasts
Pork Rind Crumbs
Parmesan Cheese
Garlic Powder
Egg
Heavy Whipping Cream
Deli Ham
Swiss Cheese
Instructions:
Preheat the oven to 400 degrees.
In a shallow bowl, combine the pork rind crumbs, parmesan cheese, garlic powder and salt and pepper to taste.
In a bowl, whisk together the egg and heavy whipping cream.
Dip the chunks of chicken into the egg mixture and then coat in the crumb mixture.
Place the breaded chicken onto a parchment lined baking sheet.
Bake for 15 minutes, or until browned and cooked through.
Remove from the oven and top each piece of chicken with ham and a square of cheese.
Place the chicken bites under the broiler until the cheese has melted.
