Ingredients

Enchiladas

  • 2 cups Shredded Chicken
  • 1 1/2 cups Cubed Ham
  • 1 cup Swiss Cheese shredded
  • 2 tsp Dijon Mustard
  • 6 Keto Zero Carb Tortillas
  • 6 ounces Cream Cheese softened

Sauce

  • 1 cup Heavy Whipping Cream
  • 1 tsp Dijon Mustard
  • 1 cup Swiss Cheese shredded

Instructions

  • Preheat the oven to 350 degrees.
  • In a mixing bowl blend together the cream cheese, 1 cup swiss cheese, 2 tsp dijon, chicken, ham and salt and pepper to taste.
  • Place a layer of filling down the center of each tortilla, and roll them closed over the filling.
  • Layer the filled tortillas seam side down in a baking dish or oven-proof skillet.
  • Pour the heavy whipping cream and dijon into a pot over medium low heat. Simmer until it begins to thicken.
  • Stir in the cheese, and simmer until melted.
  • Season with salt and pepper to taste.
  • Pour the cheese sauce over the top of the tortillas.
  • Bake for 15 minutes.
