What Is Chicken Cordon Bleu
A classic chicken cordon bleu is a dish made with meat wrapped around cheese, breaded, and then pan-fried. The most common type that people make is a chicken breast wrapped around ham and swiss cheese.

Then, it’s breaded and pan-fried and topped with a creamy white sauce. Some versions bake them, but the chicken always comes out nice and crispy.
I took this classic recipe and gave it a little twist! Instead of trying to stuff raw chicken breasts with ham and swiss, I turned all of the ingredients into a simple enchilada!
Chicken Cordon Bleu Enchiladas
You won’t believe that these cheesy cordon bleu enchiladas are low-carb, but they are! There are only 4 grams net carbs in each serving. And this recipe makes six servings!

For the chicken, use any leftover cooked chicken that you have. If you don’t have any leftover chicken, then grab a rotisserie chicken from the store.

What To Eat With Enchiladas
Serve these enchiladas with your favorite sides. I like to serve the enchiladas with some skillet keto garlic butter rosemary rolls. The buttery and herby flavors are perfect with the creamy sauce.

You can also serve them with classic Tex Mex sides, too. Enjoy some keto chips and guacamole, or some keto salsa. And if you want to enjoy them with a bowl of soup, make a keto Italian wedding soup. It will taste amazing with it.
Enchilada Meal Prep
These enchiladas will taste amazing in your weekly meal prep! Store the leftover enchiladas in an airtight container in the refrigerator.

They might last up to three days. But I recommend eating them as soon as possible. The cheese sauce will soften the tortillas as they set in the fridge.
You can freeze the enchiladas, too! Store them in an oven-safe and freezer-safe container (like an aluminum pan).
Wrap them up tightly and keep them in the freezer for up to six months.

Ingredients:
- Shredded chicken
- Cubed ham
- Swiss cheese shredded
- Dijon mustard
- Keto zero carb tortillas
- Cream cheese softened
- Salt and pepper to taste
For the sauce:
- Heavy whipping cream
- Dijon mustard
- Swiss cheese shredded
- Salt and pepper to taste
Instructions:

Preheat the oven to 350 degrees. In a mixing bowl blend together the cream cheese, 1 cup swiss cheese, 2 tsp dijon, chicken, ham and salt and pepper to taste.

Place a layer of filling down the center of each tortilla, and roll them closed over the filling.

Layer the filled tortillas seam side down in a baking dish or oven-proof skillet.

Pour the heavy whipping cream and dijon into a pot over medium low heat. Simmer until it begins to thicken. Stir in the cheese, and simmer until melted. Season with salt and pepper to taste.

Pour the cheese sauce over the top of the tortillas.

Bake for 15 minutes.
