1poundShredded Chicken Breast
1/2cupOnion chopped
1/3cupCelery chopped
2tbspButterunsalted
8ouncesMushroomssliced
4tspGarlicminced
1tspGinger Paste
1/2tspGround Thyme
1/2tspTurmeric
Juicefrom 1/2 a lemon
6cupsChicken Broth
3-4cupsRaw Spinach
2cupsCauliflower Florets
Red Pepper Flakes to taste
Instructions
Melt the butter in a pot over medium heat.
Add in the celery and onions, and cook until beginning to soften.
Stir in the mushrooms, and saute until softened.
Mix in the garlic, ginger paste, turmeric, thyme, lemon juice, red pepper flakes and salt and pepper to taste. Saute for 1 minute.
Pour in the chicken broth and the cauliflower.
Cover and simmer for about 10 minutes, or until the cauliflower begins to soften.
Stir in the spinach and chicken, and cook until the spinach has wilted.
