1 1/2pounds Boneless Skinless Chicken Breasts cut into bite-sized pieces
2tbspOlive Oil
1/2Onion chopped
1/2cupDry White Cooking Wine
Juice from 1/2 a Lemon
3tspMinced Garlic
4tbspButter
1/2cupParmesan Cheese grated
Instructions
Add the oil to a skillet over medium high heat.
Season the chicken with salt and pepper to taste, and add to the heated skillet.
Sear the chicken on all sides until cooked through. Remove and set aside.
Discard all but a tablespoon of the grease from the skillet, and reduce the heat to medium.
Stir in the onions, and saute until beginning to soften.
Pour in the white cooking wine and lemon juice, and simmer until the liquid is reduced by half.
Mix in the garlic and butter, and simmer until the butter has melted.
Add the parmesan to the skillet, and stir to combine.
Return the chicken to the skillet, and toss to coat in the sauce before serving.
