Ingredients

  • 1 1/2 pounds Boneless Skinless Chicken Breasts cut into bite-sized pieces
  • 2 tbsp Olive Oil
  • 1/2 Onion chopped
  • 1/2 cup Dry White Cooking Wine
  • Juice from 1/2 a Lemon
  • 3 tsp Minced Garlic
  • 4 tbsp Butter
  • 1/2 cup Parmesan Cheese grated

Instructions

  • Add the oil to a skillet over medium high heat.
  • Season the chicken with salt and pepper to taste, and add to the heated skillet.
  • Sear the chicken on all sides until cooked through. Remove and set aside.
  • Discard all but a tablespoon of the grease from the skillet, and reduce the heat to medium.
  • Stir in the onions, and saute until beginning to soften.
  • Pour in the white cooking wine and lemon juice, and simmer until the liquid is reduced by half.
  • Mix in the garlic and butter, and simmer until the butter has melted.
  • Add the parmesan to the skillet, and stir to combine.
  • Return the chicken to the skillet, and toss to coat in the sauce before serving.
